- 2 lb. special crabmeat, picked over
- 2 eggs
- 1/4 c. fresh bread crumbs
- 3/4 c. mayonnaise
- 1 tsp. Worcestershire sauce
- 1 tsp. prepared mustard
- 2 Tbsp. parsley flakes
- dash of pepper and salt
Method
- In a bowl mix eggs, bread crumbs, mayonnaise and seasonings. Salt to taste.
- Add crabmeat and mix gently but thoroughly.
- Shape into cakes and fry or saute until golden brown.
- Serves 5 to 6.
