- 1 lb. ground beef
- 1 c. chopped onion
- 1 c. diced potatoes
- 1 c. diced carrots
- 1 c. shredded cabbage
- 1 c. diced celery
- 2 (1 lb.) cans tomatoes
- 1/4 c. rice
- 3 c. water
- 4 tsp. salt
- 1/4 tsp. thyme
- 1 bay leaf
- 1/4 tsp. basil
- 1 (5 oz.) can tomato juice
Method
- Cook beef and onions together until browned; drain excess fat. Add all remaining ingredients and bring mixture to a boil.
- Cover and simmer for 1 hour or until vegetables are done.
