Ingredients
- 1 Tbsp. lemon juice
- 3/4 c. mayonnaise
- 2 c. cooked rice
- 2 c. diced, cooked chicken
- 1 c. diced celery
- 1/2 c. sliced pimento-stuffed green olives
- 1/4 c. sliced almonds, toasted
- 2 Tbsp. diced green onions
- dash of pepper
- 6 lettuce cups
Method
- Add lemon juice to mayonnaise; blend well. Combine with remaining ingredients, except lettuce cups. Mix lightly and chill. Serve in individual lettuce cups. Garnish with additional sliced olives or paprika.
