Ingredients

  • 2 lb. smoked ham, ground
  • 1 lb. fresh lean pork, ground
  • 2 Tbsp. chopped parsley
  • 1 c. Nabisco cracker crumbs
  • 2 eggs
  • 1/2 c. milk
  • 1/2 tsp. salt
  • pepper to taste
  • 6 strips uncooked bacon

Method

  • Have your butcher grind the meat or use your food processor. Mix all ingredients well except for bacon.
  • Shape in loaf. Place in shallow pan. Cover with bacon strips. Bake, uncovered, 1 3/4 to 2 hours at 375°.
  • During the last 3/4 hour, baste with the following sauce every 15 minutes.
