Ingredients

  • 2 c. cubed potatoes
  • 1 c. sliced carrots
  • 1 c. chopped celery
  • 2 c. cubed cooked ham
  • 1/2 chopped bell pepper
  • 1/2 chopped onion
  • 1/4 c. oleo
  • 3 Tbsp. plain flour
  • 1 1/2 c. milk
  • 1/2 c. shredded Cheddar cheese
  • salt
  • pepper
  • 1/2 c. bread crumbs

Method

  • Cook potatoes, celery and carrots.
  • Saute ham, green peppers and onions in oleo.
  • Place ham mixture in greased 2-quart casserole dish.
  • Melt 1/4 cup oleo in heavy saucepan.
  • Add flour. Stir until smooth.
  • Gradually add milk.
  • Cook until thickened. Stir in cheese, salt and pepper.
  • Pour over ham and vegetables. Sprinkle with bread crumbs.
  • Bake at 350° for 25 to 30 minutes.
