- 2 c. cubed potatoes
- 1 c. sliced carrots
- 1 c. chopped celery
- 2 c. cubed cooked ham
- 1/2 chopped bell pepper
- 1/2 chopped onion
- 1/4 c. oleo
- 3 Tbsp. plain flour
- 1 1/2 c. milk
- 1/2 c. shredded Cheddar cheese
- salt
- pepper
- 1/2 c. bread crumbs
Method
- Cook potatoes, celery and carrots.
- Saute ham, green peppers and onions in oleo.
- Place ham mixture in greased 2-quart casserole dish.
- Melt 1/4 cup oleo in heavy saucepan.
- Add flour. Stir until smooth.
- Gradually add milk.
- Cook until thickened. Stir in cheese, salt and pepper.
- Pour over ham and vegetables. Sprinkle with bread crumbs.
- Bake at 350° for 25 to 30 minutes.
