Ingredients

  • 2 pounds Ground Chuck Or Ground Turkey
  • 1 pound Bulk Italian Sausage Or Turkey Sausage, Removed From Casing (use Mild Or Spicy)
  • 3 cans (15 Oz. Can) Chili Beans, Drained
  • 1 can (15 Oz. Can) Chili Beans In Spicy Sauce
  • 2 cans (28 Oz. Can) Tomatoes Diced With Juice
  • 1 can (6 Oz. Can) Tomato Paste
  • 1 whole Yellow Onion, Chopped
  • 3 stalks Celery, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 1 whole Red Bell Pepper, chopped
  • 2 whole Green Chili Peppers, Seeded And Chopped
  • 1 Tablespoon Bacon Bits
  • 4 cubes Beef Bouilon
  • 1/2 cups Beer
  • 1/4 cups Chili Powder
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Dried Oregano
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Tabasco Sauce
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Pepper
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon White Sugar
  • Fritos, For Garnish
  • Shredded Cheddar Cheese For Garnish

Method

  • Crumble the ground meat and sausage in large pot and cook until brown. Drain excess grease.
  • Pour in the chili beans, spicy chili beans and sauce, tomatoes and tomato paste.
  • Add the onion, celery, bell peppers, chili peppers, bacon, bouillon, and beer. Season with all the spices. Stir to blend.
  • Cover and cook over low heat at a simmer for 2 or more hours, stirring occasionally.
  • After 2 hours taste and adjust seasoning as needed. The longer the chili simmers, the better it will taste.
  • Garnish with Fritos, cheese and other toppings.
