- 2 pounds Ground Chuck Or Ground Turkey
- 1 pound Bulk Italian Sausage Or Turkey Sausage, Removed From Casing (use Mild Or Spicy)
- 3 cans (15 Oz. Can) Chili Beans, Drained
- 1 can (15 Oz. Can) Chili Beans In Spicy Sauce
- 2 cans (28 Oz. Can) Tomatoes Diced With Juice
- 1 can (6 Oz. Can) Tomato Paste
- 1 whole Yellow Onion, Chopped
- 3 stalks Celery, Chopped
- 1 whole Green Bell Pepper, Chopped
- 1 whole Red Bell Pepper, chopped
- 2 whole Green Chili Peppers, Seeded And Chopped
- 1 Tablespoon Bacon Bits
- 4 cubes Beef Bouilon
- 1/2 cups Beer
- 1/4 cups Chili Powder
- 1 Tablespoon Worcestershire
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Dried Oregano
- 2 teaspoons Ground Cumin
- 2 teaspoons Tabasco Sauce
- 1 teaspoon Dried Basil
- 1 teaspoon Salt
- 1 teaspoon Ground Pepper
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Paprika
- 1 teaspoon White Sugar
- Fritos, For Garnish
- Shredded Cheddar Cheese For Garnish
Method
- Crumble the ground meat and sausage in large pot and cook until brown. Drain excess grease.
- Pour in the chili beans, spicy chili beans and sauce, tomatoes and tomato paste.
- Add the onion, celery, bell peppers, chili peppers, bacon, bouillon, and beer. Season with all the spices. Stir to blend.
- Cover and cook over low heat at a simmer for 2 or more hours, stirring occasionally.
- After 2 hours taste and adjust seasoning as needed. The longer the chili simmers, the better it will taste.
- Garnish with Fritos, cheese and other toppings.
