Ingredients
- 4 slices bacon
- 1 large onion
- 6 medium tomatoes
- 2 c. sliced okra
- 1 green pepper
- 1 (16 oz.) can whole kernel corn
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. chili powder
- 1/2 c. long grain rice
Method
- Cook bacon.
- Remove and drain.
- Measure 3 tablespoons bacon fat in skillet.
- Add onion and saute until tender.
- Add remaining ingredients.
- Cover and simmer 20 minutes or until rice is tender. Put in dish and crumble bacon on it.
