Ingredients
- 6 red, yellow, and orange bell peppers
- 1 lb. penne
- 1/4 c. extra-virgin olive oil
- 12 black olives
- 1/2 c. Ricotta salata
- salt and pepper
Method
- Cook penne according to package directions.
- Cut bell peppers into wedges, coat with olive oil and grill.
- Cut into thin strips.
- Toss with pasta, oilive oil, olives and ricotta salata.
- Season to taste with salt and pepper.
