- 24 uncooked large shrimp
- 14 medium pineapple, chopped coarsely
- 1 mango, coarsely chopped
- 1 large banana, coarsely chopped
- 14 cup loosley packed mint leaf
- 2 tablespoons lime juice
- 12 cup fresh mint leaves
- 12 cup fresh parsley
- 1 garlic clove
- 2 tablespoons lime juice
- 1 tablespoon olive oil
Method
- Make herb sauce.
- Cook prawns on heated lightly oiled grill pan or your grill on the BBQ until colour has changed and is cooked throughout.
- cook fruit on the same grill until slightly brown.
- Combine prawns and fruit in a large bowl with the mint leaves and juice.Serve into individual bowls and drizzle on herb sauce.
- Blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined.
- This will be the Herb Sauce.
