Ingredients

  • 24 uncooked large shrimp
  • 14 medium pineapple, chopped coarsely
  • 1 mango, coarsely chopped
  • 1 large banana, coarsely chopped
  • 14 cup loosley packed mint leaf
  • 2 tablespoons lime juice
  • 12 cup fresh mint leaves
  • 12 cup fresh parsley
  • 1 garlic clove
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

Method

  • Make herb sauce.
  • Cook prawns on heated lightly oiled grill pan or your grill on the BBQ until colour has changed and is cooked throughout.
  • cook fruit on the same grill until slightly brown.
  • Combine prawns and fruit in a large bowl with the mint leaves and juice.Serve into individual bowls and drizzle on herb sauce.
  • Blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined.
  • This will be the Herb Sauce.
