Ingredients
- 4 slices whole wheat bread
- 2 Tbsp. butter, softened
- 2 slices Swiss cheese
- 8 fresh large spinach leaves
- 2 slices tomato
- 2 Tbsp. guacamole or sour cream
- 2 slices Cheddar or Colby cheese
Method
- Butter one side of each slice of bread.
- Place 2 slices, buttered side down, on a heated griddle.
- On each slice, add Swiss cheese, fresh spinach, tomato and guacamole or sour cream.
- Top with remaining slice of cheese and bread with buttered side up. After 2 to 3 minutes, turn sandwich to toast both sides.
