Ingredients

  • 4 slices whole wheat bread
  • 2 Tbsp. butter, softened
  • 2 slices Swiss cheese
  • 8 fresh large spinach leaves
  • 2 slices tomato
  • 2 Tbsp. guacamole or sour cream
  • 2 slices Cheddar or Colby cheese

Method

  • Butter one side of each slice of bread.
  • Place 2 slices, buttered side down, on a heated griddle.
  • On each slice, add Swiss cheese, fresh spinach, tomato and guacamole or sour cream.
  • Top with remaining slice of cheese and bread with buttered side up. After 2 to 3 minutes, turn sandwich to toast both sides.
