Ingredients
- 6 to 8 tomatillos
- 4 to 6 jalapenos (to taste)
- 1 large onion, chopped
- 1 clove garlic
- 1/2 bunch fresh cilantro or more to taste
- 1 tsp. cumin
- salt and pepper to taste
Method
- Husk tomatillos, seed jalapenos and cook together in boiling water until tomatillos change color and peppers become slightly tender; drain.
- Place in blender with remaining ingredients.
- Use over beef enchiladas.
