Ingredients

  • 8 to 10 fresh or canned whole green chiles
  • 1/2 lb. Cheddar cheese, grated
  • 5 eggs, lightly beaten
  • 2 1/2 Tbsp. whipping cream
  • 2 Tbsp. onion, minced
  • 3/4 tsp. salt
  • 1/2 tsp. garlic, minced
  • ground pepper

Method

  • Preheat oven to 325°.
  • Generously grease 10-inch pie pan or shallow casserole.
  • Line plate with split chiles, covering bottom of pan completely; extend up sides as much as possible.
  • Combine cheese, eggs, cream, onion, salt, garlic and pepper in blender about 2 minutes.
  • Carefully pour into pie plate and bake about 30 minutes.
  • Let cool slightly before cutting into wedges.
