Ingredients

  • 2 lb. fresh green beans
  • 1 lb. bacon, cut in 1-inch cubes
  • 1 large onion, chopped coarsely
  • salt and pepper
  • 1/2 tsp. thyme
  • 1/2 to 1 c. broth
  • 1 lb. small new potatoes

Method

  • String the beans and break into pieces if they are very large. You may wish to leave very young tender beans whole. Fry bacon pieces for 10 minutes over medium heat.
  • Pour out grease.
  • Add onion and fry 10 minutes longer.
  • Mix together the bacon, onion, beans, salt, pepper and thyme.
  • Add broth. Clean the potato skins; do not peel. Arrange over beans. Cover tightly and simmer for 15 to 20 minutes or until potatoes are done.
  • Add more broth, if needed.
