Ingredients

  • 3 medium red potatoes
  • 1/2 pound fresh green beans, cut into 1-inch pieces
  • 8 bacon strips, cooked and crumbled
  • 1/4 cup olive oil
  • 1/4 cup chopped green onions
  • 3 tablespoons white wine vinegar
  • 2 tablespoons minced fresh parsley
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried tarragon
  • Pepper to taste

Method

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
  • Meanwhile, place beans in a saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Drain and slice potatoes.
  • In a large bowl, combine the potatoes, beans and bacon. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Pour over potato mixture and toss to coat. Serve at room temperature or cover and refrigerate for 2-3 hours.
