Ingredients

  • opossum
  • raccoon
  • ground hog

Method

  • Clean, wash and cut meat in serving size pieces.
  • Place meat in heavy saucepan, covering with cold water and 1/2 teaspoon salt. Soak for 30 minutes.
  • After soaking, place saucepan and its contents on medium-high heat and boil for 30 minutes.
  • After boiling, drain liquid from meat.
  • Return to burner and cover the meat with water again, adding 1 to 2 bay leaves and 2 tablespoons of lard or a small piece of salt pork.
  • Cook until tender.
  • Remove meat from cooker and place in baking dish.
  • Sprinkle with salt and black pepper and bake at 400° until brown.
