Ingredients
- 3 cups zucchini cut in 1/2 slices
- 1/2 cup chopped onion
- 1/4 cup olive oil
- 16 oz. tomatoes, cut up
- 2 Tbsp chopped fresh or 1 1/2 tsp dried mint
- 2 Tbsp chopped fresh dill or 1 1/2 tsp dried dill weed
- 3/4 tsp salt
- 1/3 tsp pepper
- 1/2 cup yogurt plain
- 8 oz. macaroni,cooked
- 4 oz. feta cheese
Method
- In a large skillet saute zucchini and onion in oil until tender, about 5 min.
- Add tomatoes, mint, dill, salt and pepper, cover and simmer 15 min.
- Stir in yogurt, cook 3 min. Serve over noodles, sprinkle with feta.
