Ingredients

  • 3 cups zucchini cut in 1/2 slices
  • 1/2 cup chopped onion
  • 1/4 cup olive oil
  • 16 oz. tomatoes, cut up
  • 2 Tbsp chopped fresh or 1 1/2 tsp dried mint
  • 2 Tbsp chopped fresh dill or 1 1/2 tsp dried dill weed
  • 3/4 tsp salt
  • 1/3 tsp pepper
  • 1/2 cup yogurt plain
  • 8 oz. macaroni,cooked
  • 4 oz. feta cheese

Method

  • In a large skillet saute zucchini and onion in oil until tender, about 5 min.
  • Add tomatoes, mint, dill, salt and pepper, cover and simmer 15 min.
  • Stir in yogurt, cook 3 min. Serve over noodles, sprinkle with feta.
