Ingredients

  • 1 lb. white mushrooms, thinly sliced
  • 2 cups shredded Swiss cheese
  • 8 green onions with tops, thinly sliced
  • 2 tablespoons chopped green bell pepper
  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons Greek Seasoning
  • 1 lb. baby spinach leaves, chilled
  • 2 cups fresh strawberries, halved

Method

  • Toss first four ingredients together in a large bowl. Stir olive oil, vinegar and seasoning together in a small bowl. Pour over first mixture. Toss. Cover and chill one hour. Just before serving, place spinach and strawberries in a large bowl. Add mushroom mixture. Toss gently until evenly coated. Serve immediately.
