- 1 lb. white mushrooms, thinly sliced
- 2 cups shredded Swiss cheese
- 8 green onions with tops, thinly sliced
- 2 tablespoons chopped green bell pepper
- 3/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons Greek Seasoning
- 1 lb. baby spinach leaves, chilled
- 2 cups fresh strawberries, halved
Method
- Toss first four ingredients together in a large bowl. Stir olive oil, vinegar and seasoning together in a small bowl. Pour over first mixture. Toss. Cover and chill one hour. Just before serving, place spinach and strawberries in a large bowl. Add mushroom mixture. Toss gently until evenly coated. Serve immediately.
