- 3 c. (8 oz.) uncooked pasta, cheese tortellini or spirals
- 2 Tbsp. lemon juice
- 1/2 c. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1 clove garlic, crushed
- 2 tomatoes, cut into wedges
- 1 cucumber, peeled and sliced
- 1 c. diced green pepper
- 12 black olives
- 3/4 c. Parmesan cheese
- 8 radishes, thinly sliced
- 1/4 c. sliced green onion
Method
- Cook pasta and drain; cool.
- Combine lemon juice, olive oil, spices and garlic in container.
- Mix until well blended and of a thick and creamy consistency.
- Chill.
- Combine cooled pasta with rest of ingredients and large bowl.
- Pour dressing over salad and toss gently to coat evenly.
- Serve immediately.
