Ingredients

  • 3 c. (8 oz.) uncooked pasta, cheese tortellini or spirals
  • 2 Tbsp. lemon juice
  • 1/2 c. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 1 clove garlic, crushed
  • 2 tomatoes, cut into wedges
  • 1 cucumber, peeled and sliced
  • 1 c. diced green pepper
  • 12 black olives
  • 3/4 c. Parmesan cheese
  • 8 radishes, thinly sliced
  • 1/4 c. sliced green onion

Method

  • Cook pasta and drain; cool.
  • Combine lemon juice, olive oil, spices and garlic in container.
  • Mix until well blended and of a thick and creamy consistency.
  • Chill.
  • Combine cooled pasta with rest of ingredients and large bowl.
  • Pour dressing over salad and toss gently to coat evenly.
  • Serve immediately.
