Ingredients

  • 2 Eggs
  • 1 teaspoon Baking Soda
  • 2 cups Water
  • 40 grams Vanilla Protein Powder
  • 20 grams Coconut Flour
  • 1 teaspoon Cinnamon
  • 1 Ripe Banana
  • 70 grams Oats
  • 1 teaspoon Coconut Oil, Divided
  • 50 grams Blueberries And Raspberries
  • Honey, To Serve

Method

  • In a large bowl, mix eggs, baking soda, water, protein powder, coconut flour and cinnamon.
  • In a blender or food processor, blend ripe banana and oats. Mix into the batter. Add 1/2 teaspoon coconut oil into the bowl, and mix well.
  • Heat remaining coconut oil in a frying pan. Portion out pancakes and cook over medium heat. Once you see tiny bubbles appear, it's time to flip the pancake!
  • Serve drizzled with honey.
