Ingredients
- 3 large eggs or 6 yolks
- 1/2 tsp. salt
- 1/2 to 3/4 c. sugar
- 2 1/2 to 2 2/3 c. milk
- 1/4 tsp. nutmeg
Method
- Beat eggs slightly.
- Beat in sugar.
- Add salt, nutmeg and milk. Pour into pastry lined pan.
- Bake about 40 minutes or until silver knife inserted into side of filling comes out clean.
- Center is still soft, but sets later.
- Cook in 450° oven for first 15 minutes.
- Reduce heat to 350° to finish baking.
