Ingredients

  • 6 egg yolks
  • 1 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. mayonnaise
  • 3 Tbsp. mustard
  • 5 lb. potatoes
  • 1/2 c. celery, chopped
  • 1/2 c. onions, chopped

Method

  • In pan, mix egg yolks, sugar and vinegar.
  • Bring to a boil until thick, stirring constantly.
  • Add mayonnaise and mustard. Boil potatoes with skin on.
  • When done, peel skins off and cut into large bite size pieces.
  • In large bowl, lightly toss potatoes, celery, onions and dressing.
  • Salt and pepper to taste. Refrigerate 4 hours to overnight.
  • The longer it sets, the better it is.
