Ingredients
- 6 egg yolks
- 1 c. sugar
- 1/2 c. vinegar
- 1/2 c. mayonnaise
- 3 Tbsp. mustard
- 5 lb. potatoes
- 1/2 c. celery, chopped
- 1/2 c. onions, chopped
Method
- In pan, mix egg yolks, sugar and vinegar.
- Bring to a boil until thick, stirring constantly.
- Add mayonnaise and mustard. Boil potatoes with skin on.
- When done, peel skins off and cut into large bite size pieces.
- In large bowl, lightly toss potatoes, celery, onions and dressing.
- Salt and pepper to taste. Refrigerate 4 hours to overnight.
- The longer it sets, the better it is.
