- 10 c. fresh or frozen whole kernel corn
- 1 small head cabbage, shredded
- 6 medium onions (vary according to your preference)
- 4 medium green peppers, chopped
- 1 stalk celery, chopped
- 2 medium red peppers, chopped
- 1 qt. cider vinegar
- 4 c. sugar
- 2 1/2 tsp. ground turmeric
- 2 1/2 tsp. dry mustard
- 2 tsp. celery seed
- 2 tsp. salt
Method
- Combine vegetables (corn, cabbage, onions, green peppers, celery, red peppers) in a large pot or Dutch oven.
- In a separate bowl, combine remaining ingredients.
- Pour over vegetables.
- Bring to a boil.
- Reduce heat and simmer 10 minutes.
- Ladle into hot jars, leaving 1/4 inch headspace.
- Adjust caps.
- Process in boiling water for 10 minutes.
- Let stand 1 hour to blend flavors.
- Yields 14 (12 oz.) jars.
