Ingredients

  • 10 c. fresh or frozen whole kernel corn
  • 1 small head cabbage, shredded
  • 6 medium onions (vary according to your preference)
  • 4 medium green peppers, chopped
  • 1 stalk celery, chopped
  • 2 medium red peppers, chopped
  • 1 qt. cider vinegar
  • 4 c. sugar
  • 2 1/2 tsp. ground turmeric
  • 2 1/2 tsp. dry mustard
  • 2 tsp. celery seed
  • 2 tsp. salt

Method

  • Combine vegetables (corn, cabbage, onions, green peppers, celery, red peppers) in a large pot or Dutch oven.
  • In a separate bowl, combine remaining ingredients.
  • Pour over vegetables.
  • Bring to a boil.
  • Reduce heat and simmer 10 minutes.
  • Ladle into hot jars, leaving 1/4 inch headspace.
  • Adjust caps.
  • Process in boiling water for 10 minutes.
  • Let stand 1 hour to blend flavors.
  • Yields 14 (12 oz.) jars.
