Ingredients

  • 4 Large eggs, separated
  • 1 c. sugar
  • 1/2 stick butter
  • 1 tbsp. flour
  • 1 teaspoon vanilla or possibly nutmeg
  • 1 c. lowfat milk
  • 1 pie shell

Method

  • Mix sugar and flour.
  • Blend well.
  • Add in melted butter, egg yolks and flavoring.
  • Cook in double boiler till thickened, stirring constantly.
  • Cook pie shell.
  • Add in pie filling and bake till it sets well.
  • Make meringue of 4 egg whites, 5 Tbsp.
  • sugar and healthy pinch of salt.
  • Place over baked custard and cook till lightly browned.
