Ingredients

  • 3 1/2 c flour
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3/4 c shortening or softened butter
  • 1 1/2 c sugar
  • 3 eggs
  • 3/4 c milk
  • 1 1/2 tsp. vanilla
  • 2 c very ripe bananas, mashed and mixed with
  • 2 Tbl. lemon juice

Method

  • Preheat oven to 350 degrees. Grease two regular loaf pans.
  • Combine flour, baking powder, salt, and baking soda in large bowl. Cream butter or shortening with sugar. Add eggs, one at a time then add milk and vanilla. Stir in bananas. Add banana mixture to flour mixture and mix just to combine.
  • Divide batter evenly between loaf pans and bake for 1 hour or until tester inserted into center of loaf comes out with a few moist crumbs.
  • Cool, slice, and serve with butter.
