Ingredients
- 2 Tbsp. whole cloves
- 2 Tbsp. broken cinnamon sticks
- 4 c. white sugar
- 1 qt. cider vinegar
- 5 c. pumpkin, pared and cut into cubes
Method
- Tie spices in cheesecloth.*
- Combine sugar and vinegar in a large pot.
- Add spice bag.
- Bring to a boil.
- Add pumpkin cubes and cook until fork-tender.
- Remove spice bag and spoon into hot sterile jar.
- Cover with syrup.
- Seal at once.
