Ingredients

  • 1/4 cup oil
  • 4 cloves
  • 2 star anise pods
  • 2 dried chipotle chiles
  • 2 rosemary sprigs
  • 1/2 cup chopped fresh ginger
  • 10 cups 1-inch-cubed peeled winter squash
  • Honey, lime, salt and freshly ground pepper, for seasoning

Method

  • In a large pot, heat the oil.
  • Add the cloves, star anise pods, dried chipotle chiles, rosemary sprigs and ginger, and cook 2 minutes, stirring.
  • Stir in the winter squash and roast at 375 until tender, about 30 minutes.
  • Discard the cloves, anise, chiles and rosemary.
  • Season with honey, lime, salt and pepper.
