Ingredients

  • 1/4 c. chopped yellow onions
  • 6 Tbsp. unsalted butter
  • 2 Tbsp. flour
  • 1/2 c. water
  • 2 c. shredded Cheddar cheese
  • 1 head cauliflower, chopped and blanched
  • 3 well beaten eggs
  • 2 Tbsp. chopped fresh parsley
  • 1/2 c. buttered, toasted bread crumbs

Method

  • Saute onions in 4 tablespoons butter until soft.
  • Add flour and water to make white sauce.
  • Blend in cauliflower and cheese.
  • Add eggs and mix until blended.
  • Put into greased 1 1/2-quart casserole.
  • Cover with breadcrumbs, parsley and 2 tablespoons butter and bake at 350° for 30 minutes.
