Ingredients
- 1/4 c. chopped yellow onions
- 6 Tbsp. unsalted butter
- 2 Tbsp. flour
- 1/2 c. water
- 2 c. shredded Cheddar cheese
- 1 head cauliflower, chopped and blanched
- 3 well beaten eggs
- 2 Tbsp. chopped fresh parsley
- 1/2 c. buttered, toasted bread crumbs
Method
- Saute onions in 4 tablespoons butter until soft.
- Add flour and water to make white sauce.
- Blend in cauliflower and cheese.
- Add eggs and mix until blended.
- Put into greased 1 1/2-quart casserole.
- Cover with breadcrumbs, parsley and 2 tablespoons butter and bake at 350° for 30 minutes.
