Ingredients

  • 1 (8 ounce) package cream cheese, softened, plus extra for serving if desired
  • 14 cup butter
  • 1 cup sugar
  • 2 14 cups flour
  • 1 12 teaspoons baking powder
  • 12 teaspoon baking soda
  • 2 eggs
  • 1 cup mashed overripe banana
  • 1 cup chopped nuts (optional)

Method

  • Preheat oven to 350.
  • Grease a 5x9 inch loaf pan.
  • Combine cream cheese, butter and sugar until well blended.
  • Sift together flour, baking powder and baking soda.
  • Add dry ingredients to cream cheese mixture.
  • Mix in eggs and bananas until just moistened.
  • Fold in nuts (if you are using them).
  • Pour into prepared pan.
  • Bake 70 minutes or until a toothpick inserted in the center comes out clean.
  • Serve with softened cream cheese.
