Ingredients
- 1 pkg. boneless chicken breasts or thighs
- 2 Tbsp. grated Parmesan cheese
- salt and pepper to taste
- 1 egg, beaten with 1 Tbsp. water
- 2 Tbsp. vegetable oil
- 6 Tbsp. butter or margarine
- 3/4 lb. sliced mushrooms
- 4 slices ham
- 8 slices Mozzarella cheese
Method
- Combine flour, Parmesan cheese, salt and pepper.
- Dip each chicken piece in beaten egg; drain.
- Dredge in flour mixture.
- Heat oil and 4 tablespoons butter in skillet.
- Add coated chicken and cook 2 minutes on each side until golden brown.
- Remove chicken with slotted spoon and arrange in a single layer in a 13 x 9-inch baking dish.
- Preheat oven to 350°.
- Add remaining 2 tablespoons butter to skillet and saute mushrooms.
- Cut ham slices in half and place over each piece of chicken.
- Scatter mushrooms over all and top with Mozzarella cheese.
- Bake 35 to 40 minutes or until tender.
