Ingredients

  • 1 pkg. boneless chicken breasts or thighs
  • 2 Tbsp. grated Parmesan cheese
  • salt and pepper to taste
  • 1 egg, beaten with 1 Tbsp. water
  • 2 Tbsp. vegetable oil
  • 6 Tbsp. butter or margarine
  • 3/4 lb. sliced mushrooms
  • 4 slices ham
  • 8 slices Mozzarella cheese

Method

  • Combine flour, Parmesan cheese, salt and pepper.
  • Dip each chicken piece in beaten egg; drain.
  • Dredge in flour mixture.
  • Heat oil and 4 tablespoons butter in skillet.
  • Add coated chicken and cook 2 minutes on each side until golden brown.
  • Remove chicken with slotted spoon and arrange in a single layer in a 13 x 9-inch baking dish.
  • Preheat oven to 350°.
  • Add remaining 2 tablespoons butter to skillet and saute mushrooms.
  • Cut ham slices in half and place over each piece of chicken.
  • Scatter mushrooms over all and top with Mozzarella cheese.
  • Bake 35 to 40 minutes or until tender.
