Ingredients
- 12 oz jar arrabbiata, or spicy tomato-red pepper sauce
- 1/2 cup black olives
- 6 None anchovy fillets, drained, chopped
- 1 lb gnocchi
- 3 cups baby spinach
- None None Shaved Parmesan, to serve
Method
- Combine arrabbiata sauce, olives and anchovies in a saucepan. Heat on medium for 5 mins, until hot.
- Meanwhile, cook gnocchi in a large saucepan of boiling salted water according to package instructions. Drain and toss through arrabbiata sauce.
- Fold in half the spinach and season to taste. Toss over low heat until spinach just wilts. Serve sprinkled with black pepper, Parmesan and the remaining spinach.
