Ingredients

  • 2 cups Grated Zucchini
  • 3 Eggs
  • 1/2 cups Applesauce (unsweetened)
  • 1/2 cups Olive Oil
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Chocolate Liquid Stevia
  • 2-1/2 cups Gluten Free Flour, Plus 1 Tablespoon
  • 1/2 cups Cocoa Powder, Unsweetened
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt
  • 1 cup Chocolate Chips

Method

  • Preheat your oven to 350 F.
  • Place your grated zucchini in a food processor and process until mashed and smooth. Pour the zucchini into a bowl and add the eggs, applesauce, oil, vanilla extract and stevia and stir to combine.
  • In another bowl stir together all the dry ingredients (all of the remaining ingredients except the chocolate chips and the extra tablespoon of flour).
  • In a small bowl mix 1 tablespoon of flour with the chocolate chips. Set aside.
  • Combine the wet ingredients with the dry ingredients and stir well. Fold in the chocolate chips.
  • Spray two 12-count muffin tins with nonstick cooking spray or use cupcake liners. (Recipe actually makes 18.) Spoon the batter into the liners.
  • Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool before adding frosting, if you plan to frost them.
