- 2 cups Grated Zucchini
- 3 Eggs
- 1/2 cups Applesauce (unsweetened)
- 1/2 cups Olive Oil
- 1 teaspoon Vanilla Extract
- 2 teaspoons Chocolate Liquid Stevia
- 2-1/2 cups Gluten Free Flour, Plus 1 Tablespoon
- 1/2 cups Cocoa Powder, Unsweetened
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 cup Chocolate Chips
Method
- Preheat your oven to 350 F.
- Place your grated zucchini in a food processor and process until mashed and smooth. Pour the zucchini into a bowl and add the eggs, applesauce, oil, vanilla extract and stevia and stir to combine.
- In another bowl stir together all the dry ingredients (all of the remaining ingredients except the chocolate chips and the extra tablespoon of flour).
- In a small bowl mix 1 tablespoon of flour with the chocolate chips. Set aside.
- Combine the wet ingredients with the dry ingredients and stir well. Fold in the chocolate chips.
- Spray two 12-count muffin tins with nonstick cooking spray or use cupcake liners. (Recipe actually makes 18.) Spoon the batter into the liners.
- Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool before adding frosting, if you plan to frost them.
