Ingredients
- 2 cups Semi-sweet Chocolate Chips, Divided
- 2/3 cups Gluten-free All-purpose Flour
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 3/4 teaspoons Xanthan Gum
- 1/3 cups Butter, Softened
- 1/4 cups Brown Sugar, Packed
- 1/2 cups Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1/2 cups Chopped Nuts (optional)
Method
- Preheat oven to 350 degrees. Butter an 8 x 8 baking dish.
- Melt 1 cup chocolate chips in the microwave on high power for one minute. Stir until completely melted. Set aside.
- Mix together flour, baking powder, salt and xanthan gum with a wire whisk. Set aside.
- In a mixing bowl, beat together butter and sugars until fluffy.
- Add eggs and vanilla to the butter mixture. Beat well.
- Add melted chocolate to the mixing bowl. Blend well.
- Slowly add the flour mixture to the bowl. Stir until combined.
- Add remaining chocolate chips (and 1/2 cup nuts, if desired).
- Spread batter in prepared pan and bake at 350 degrees for 30-35 minutes.
- Cool and dust with powdered sugar.
- (Note: I use Bob's Red Mill Gluten Free All Purpose Flour for this recipe, but any all purpose flour mix should work.)
