Ingredients

  • 2 cups Semi-sweet Chocolate Chips, Divided
  • 2/3 cups Gluten-free All-purpose Flour
  • 1/2 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 3/4 teaspoons Xanthan Gum
  • 1/3 cups Butter, Softened
  • 1/4 cups Brown Sugar, Packed
  • 1/2 cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1/2 cups Chopped Nuts (optional)

Method

  • Preheat oven to 350 degrees. Butter an 8 x 8 baking dish.
  • Melt 1 cup chocolate chips in the microwave on high power for one minute. Stir until completely melted. Set aside.
  • Mix together flour, baking powder, salt and xanthan gum with a wire whisk. Set aside.
  • In a mixing bowl, beat together butter and sugars until fluffy.
  • Add eggs and vanilla to the butter mixture. Beat well.
  • Add melted chocolate to the mixing bowl. Blend well.
  • Slowly add the flour mixture to the bowl. Stir until combined.
  • Add remaining chocolate chips (and 1/2 cup nuts, if desired).
  • Spread batter in prepared pan and bake at 350 degrees for 30-35 minutes.
  • Cool and dust with powdered sugar.
  • (Note: I use Bob's Red Mill Gluten Free All Purpose Flour for this recipe, but any all purpose flour mix should work.)
