Ingredients

  • 1 1/4 cups whole wheat pancake-and-waffle mix
  • 1/3 cup chopped crystallized ginger
  • 1 teaspoon ground ginger
  • 1 cup whole milk
  • 4 tablespoons honey
  • 3 tablespoons olive or canola oil
  • 1 large egg

Method

  • Stir together first 3 ingredients in a medium bowl. Add milk and next 3 ingredients, stirring until smooth. Let stand 5 minutes.
  • Cook batter in a preheated, lightly greased waffle iron until crisp and brown. Serve immediately with Strawberry-Maple Syrup.
  • Note: We tested with Aunt Jemima Whole Wheat Blend Pancake & Waffle mix.
  • Note: Nutritional analysis includes about 2 3/4 Tbsp. syrup.
