Ingredients

  • 8 to 12 slices bacon
  • 3/4 c. onion, chopped
  • 8 to 10 potatoes, cooked ahead
  • 3/4 c. vinegar
  • 1 tsp. salt
  • 3/4 c. sugar
  • 2 Tbsp. water
  • 2 tsp. flour
  • 1 tsp. dried parsley

Method

  • Chop and saute bacon.
  • Add onion to bacon just before the bacon is done and cook.
  • Remove from heat.
  • Drain off excess grease and discard.
  • In a separate pot, bring to a boil, vinegar, salt and sugar.
  • Dissolve flour into water and add to dressing. Add bacon and onion to dressing.
  • Pour over potatoes, which have been cut into bite-size pieces.
