Ingredients
- 8 to 12 slices bacon
- 3/4 c. onion, chopped
- 8 to 10 potatoes, cooked ahead
- 3/4 c. vinegar
- 1 tsp. salt
- 3/4 c. sugar
- 2 Tbsp. water
- 2 tsp. flour
- 1 tsp. dried parsley
Method
- Chop and saute bacon.
- Add onion to bacon just before the bacon is done and cook.
- Remove from heat.
- Drain off excess grease and discard.
- In a separate pot, bring to a boil, vinegar, salt and sugar.
- Dissolve flour into water and add to dressing. Add bacon and onion to dressing.
- Pour over potatoes, which have been cut into bite-size pieces.
