Ingredients
- 2 1/2 c. sifted flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. butter or margarine
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 4 eggs, separated
- 1 c. crushed, drained pineapple
Method
- Sift flour, baking powder and salt.
- Cream butter and sugar thoroughly.
- Gradually beat in egg yolks.
- Blend in vanilla and pineapple.
- Fold in sifted, dry ingredients.
- Rinse beaters and beat egg whites.
- Beat until stiff; fold into batter.
- Pour into 2 (9-inch) cake pans, greased.
- Bake in oven at 350° for 30 or 35 minutes.
- Cool in pans for 5 minutes.
- Frost with 7 Minute Icing.
