Ingredients

  • 2 1/2 c. sifted flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. butter or margarine
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 4 eggs, separated
  • 1 c. crushed, drained pineapple

Method

  • Sift flour, baking powder and salt.
  • Cream butter and sugar thoroughly.
  • Gradually beat in egg yolks.
  • Blend in vanilla and pineapple.
  • Fold in sifted, dry ingredients.
  • Rinse beaters and beat egg whites.
  • Beat until stiff; fold into batter.
  • Pour into 2 (9-inch) cake pans, greased.
  • Bake in oven at 350° for 30 or 35 minutes.
  • Cool in pans for 5 minutes.
  • Frost with 7 Minute Icing.
