Ingredients

  • 2 c. sugar
  • 1 lb. butter, softened
  • pinch of salt
  • 1 c. Mandarin Marmalade
  • 3 3/4 c. sifted cake flour
  • 16 eggs
  • 1 vanilla bean
  • 2 Tbsp. Mandarin Napoleon (optional)

Method

  • In a large pan, preferably copper, mix sugar, eggs, salt and vanilla bean.
  • Over very low heat, gently beat the ingredients with a whisk.
  • This process can be done in a double boiler.
  • When the mixture begins to foam and rise well up in pan, remove from heat and continue whisking until the mixture is cold.
  • Remove vanilla bean.
  • Continue beating, gradually adding flour via a sifter. Whisk in softened butter.
