Ingredients
- 2 c. sugar
- 1 lb. butter, softened
- pinch of salt
- 1 c. Mandarin Marmalade
- 3 3/4 c. sifted cake flour
- 16 eggs
- 1 vanilla bean
- 2 Tbsp. Mandarin Napoleon (optional)
Method
- In a large pan, preferably copper, mix sugar, eggs, salt and vanilla bean.
- Over very low heat, gently beat the ingredients with a whisk.
- This process can be done in a double boiler.
- When the mixture begins to foam and rise well up in pan, remove from heat and continue whisking until the mixture is cold.
- Remove vanilla bean.
- Continue beating, gradually adding flour via a sifter. Whisk in softened butter.
