Ingredients

  • 4 boneless chicken breasts
  • 3/4 c. fine dry bread crumbs (Italian seasoned)
  • 1/4 tsp. salt
  • 1/8 tsp. fresh ground pepper
  • 1 egg, beaten
  • 1/4 c. olive oil
  • meatless spaghetti sauce
  • 2 tsp. freshly grated Parmesan cheese
  • 1 c. shredded Mozzarella cheese

Method

  • Pound chicken breasts to 1/4-inch thickness. Combine bread crumbs, salt and pepper. Dip chicken in egg. Coat with bread crumbs. Place chicken on a baking sheet. Cool and chill for 10 minutes. Saute chicken in olive oil over medium-low heat 5 minutes on each side or until golden brown. Remove chicken from skillet. Place in a 12 x 8 x 2-inch baking dish. Spoon spaghetti sauce on chicken. Sprinkle with Parmesan cheese. Bake at 350° for 15 minutes. Top with Parmesan cheese and bake an additional minutes or until cheese melts and sauce is bubbly.
