Ingredients

  • 2 Cucumbers, Diced
  • 3 Large Tomatoes, Diced
  • 1 Red Pepper, Chopped
  • 1 Red Onion, Chopped
  • 3 Garlic Cloves, Minced
  • 1/4 Cup Red Wine Vinegar
  • 2 1/2 Cups Tomato Juice
  • Salt
  • Pepper
  • 1/4 Cup Fresh Parsley, Chopped
  • 1/4 Cup Fresh Basil, Chopped
  • Juice of 1 Lime
  • Taboasco

Method

  • In large glass bowl combine vegetables. Add remaining ingredients and mix well. Add half the mixture to a food processor and blend until smooth. Combine puree with original mixture. Chill for 4 hours and serve.
