Ingredients

  • 3 medium tomatoes
  • 1 small cucumber, chopped
  • 1 medium green pepper, chopped
  • 2 green onions, sliced
  • 12 oz. can vegetable juice cocktail
  • 2 Tbsp. vinegar
  • 1 tsp. olive oil
  • 1 clove garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. dried basil, crushed
  • dashes of hot pepper sauce
  • croutons (optional)

Method

  • Peel tomatoes and chop.
  • Mix tomatoes, cucumber, green pepper and onions.
  • Stir vegetable juice cocktail, vinegar, olive oil, garlic salt, basil and hot pepper sauce into tomato mixture. Cover and chill for several hours before serving.
