Ingredients
- 1 Tbsp. olive oil
- 4 to 6 drumsticks
- 2 shallots or 1/4 c. chopped onions
- pepper to taste
- 2 large mushrooms, quartered
- 1 sweet potato, chopped
- 1/2 c. white wine or chicken stock
Method
- Heat oil over medium-high heat in Dutch oven.
- Brown drumsticks on both sides.
- Add shallots, mushrooms and potato. Pepper lightly.
- Pour in white wine or chicken stock.
- Cover and lower heat.
- Simmer for 20 minutes.
