- 4 c. low sodium tomato juice
- 1/3 c. red wine vinegar
- 2 Tbsp. chopped fresh or freeze dried chives
- 1/4 tsp. ground red pepper
- 2 medium tomatoes, chopped
- 1 medium cucumber, chopped
- 1/2 c. chopped onions
- 2 cloves garlic, crushed
- 1 c. low sodium croutons
- 1 medium green pepper, chopped
Method
- In large bowl, stir together tomato juice, vinegar, chives and red peppers.
- Stir in tomatoes, cucumbers, green peppers, onion and garlic.
- Chill 3 hours or until serving time.
- Serve with low sodium croutons.
