Ingredients

  • 4 c. low sodium tomato juice
  • 1/3 c. red wine vinegar
  • 2 Tbsp. chopped fresh or freeze dried chives
  • 1/4 tsp. ground red pepper
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, chopped
  • 1/2 c. chopped onions
  • 2 cloves garlic, crushed
  • 1 c. low sodium croutons
  • 1 medium green pepper, chopped

Method

  • In large bowl, stir together tomato juice, vinegar, chives and red peppers.
  • Stir in tomatoes, cucumbers, green peppers, onion and garlic.
  • Chill 3 hours or until serving time.
  • Serve with low sodium croutons.
