Ingredients
- 4 c. peeled and chopped tomatoes with juice
- 2 c. peeled and chopped cucumbers
- 3/4 c. diced green peppers
- 3/4 c. minced onions
- 2 c. V-8 juice
Method
- Combine the first five ingredients.
- Blend 1/2 of this in your processor.
- Recombine the two batches.
- Add 1/3 cup olive oil, 3 tablespoons cider vinegar, salt and pepper to taste.
- Other additions are Tabasco, diced jalapeno, chopped green chiles or red pepper flakes.
- Chill very thoroughly.
- Serve with an ice cube in each bowl.
