Ingredients
- 2 c. sugar
- 1/2 c. water
- 2 Tbsp. Texas honey
- 2 tsp. vanilla extract
- 1 tsp. rum flavoring
- 3 c. Texas pecan halves
Method
- Combine
- sugar,
- water
- and
- honey
- in a heavy saucepan, stirring to
- mix.
- Bring
- mixture
- to a boil (do not stir), and cook to
- soft ball stage (240°).
- Remove from heat; add flavorings, and cook to lukewarm.
- Beat with an electric mixer 2 to 3 minutes
- or
- until
- mixture turns creamy.
- Add pecans, stirring until
- coated.
- Drop
- by heaping teaspoonfuls onto waxed paper. Let cool.
- Yields 3 1/4 cups.
