Ingredients

  • 2 c. sugar
  • 1/2 c. water
  • 2 Tbsp. Texas honey
  • 2 tsp. vanilla extract
  • 1 tsp. rum flavoring
  • 3 c. Texas pecan halves

Method

  • Combine
  • sugar,
  • water
  • and
  • honey
  • in a heavy saucepan, stirring to
  • mix.
  • Bring
  • mixture
  • to a boil (do not stir), and cook to
  • soft ball stage (240°).
  • Remove from heat; add flavorings, and cook to lukewarm.
  • Beat with an electric mixer 2 to 3 minutes
  • or
  • until
  • mixture turns creamy.
  • Add pecans, stirring until
  • coated.
  • Drop
  • by heaping teaspoonfuls onto waxed paper. Let cool.
  • Yields 3 1/4 cups.
