Ingredients

  • 1 Tbsp. olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14 oz.) can chopped tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1 tsp. sugar
  • 1/2 tsp. oregano
  • 1 tsp. basil
  • 6 medium mushrooms, sliced
  • 1/4 tsp. crushed red peppers
  • 7 sun-dried tomatoes, soaked in boiling water 2 minutes if not soaked in oil
  • 1/4 tsp. salt

Method

  • Heat olive oil in medium size pan.
  • Add onion.
  • Saute 2 minutes.
  • Add garlic; saute 1 minute.
  • Add tomatoes and tomato sauce; heat to boiling.
  • Add tomato paste; simmer 15 minutes, stirring occasionally.
  • Stir in sugar, oregano, basil, red pepper, salt, sun-dried tomatoes and mushrooms.
  • Simmer 15 minutes more and pour over your favorite noodles.
