Ingredients
- 12 lb vanilla wafer, crushed
- 12 cup butter, softened
- 12 lb powdered sugar, sifted
- 34 cup pecans
- 3 eggs, separated
- 34 cup sweet sherry
Method
- Cream together the butter and the sugar.
- Beat the egg yolks and add them to the creamed mixture.
- Best the egg whites stiff and fold them into the mixture with care.
- Carefully blend in the nuts and then the sherry.
- Butter baking dish and line it with the Vanilla water crumbs, saving some of the crumbs for use later as a topping.
- Spread the filling mixture over the crumbs and sprinkle the reserved crumbs over the top.
- Cover the dish with plastic wrap and let stand in your refrigerator overnight.
- Serve with whipped cream.
