Ingredients

  • 12 lb vanilla wafer, crushed
  • 12 cup butter, softened
  • 12 lb powdered sugar, sifted
  • 34 cup pecans
  • 3 eggs, separated
  • 34 cup sweet sherry

Method

  • Cream together the butter and the sugar.
  • Beat the egg yolks and add them to the creamed mixture.
  • Best the egg whites stiff and fold them into the mixture with care.
  • Carefully blend in the nuts and then the sherry.
  • Butter baking dish and line it with the Vanilla water crumbs, saving some of the crumbs for use later as a topping.
  • Spread the filling mixture over the crumbs and sprinkle the reserved crumbs over the top.
  • Cover the dish with plastic wrap and let stand in your refrigerator overnight.
  • Serve with whipped cream.
