Ingredients

  • 5 1/4 ounces fusilli or any short pasta
  • 1 tablespoon olive oil
  • 1/2 red onion sliced into thin wedges
  • 6 sun dried tomatoes chopped
  • 1 tablespoon balsamic vinegar
  • salt
  • ground black pepper
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 2/3 cup feta cheese or goat cheese

Method

  • Cook the pasta according to the instructions on the package, al dente.
  • When the pasta is almost done, heat the olive oil in another saucepan. Add the onion and cook over low heat for 5 to 8 minutes until light golden brown.
  • Add the tomatoes, balsamic vinegar, and the cooked pasta. Season with salt and pepper to taste. Remove from the stove and let it cool.
  • Add the parsley, basil, and cheese. Mix carefully and serve.
