Ingredients

  • 1/2 c. softened butter
  • 3/4 c. firmly packed brown sugar
  • 3 eggs
  • 12 oz. pkg. semisweet chocolate bits, melted in double boiler
  • 2 tsp. instant coffee
  • 1 tsp. rum extract
  • 1/2 c. all purpose flour
  • 1 c. chopped walnuts (reserve some for garnish)
  • 1 unbaked 9" pastry shell
  • whipped cream for garnish

Method

  • Cream butter; gradually adding in brown sugar and beating at medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Add melted chocolate, coffee granules, rum extract and mix well. Stir in flour and nuts. Place into pastry shell and bake at 325 degrees for 25 min. Cool completely and chill for at least 4-5 hrs. before serving. For a garnish, make a thick circle of whipped cream. about an inch or so in from the circumference. Sprinkle some reserved walnuts on the whipped cream.
