Ingredients
- None None FOR THE GRANITA
- 1/2 cup sugar
- 2 None lemons, peeled and juiced, peel reserved
- 2 None limes, peeled and juiced, peel reserved
- None None FOR THE KABOBS
- 1 1/2 lbs mixed fresh fruit, such as strawberries, cherry, pineapple, plums and mangoes, cut into bite-sized pieces
- 2 tbsp honey
Method
- For the granita, place the sugar and 2 1/2 cups water in a medium saucepan on medium heat. Add the lemon and lime peels. Stir until the sugar has dissolved. Bring to a boil; boil for 5 mins. Add the lemon and lime juices. Cool.
- Strain into a freezer-proof container; cover. Freeze for 2 hrs until ice crystals start to form around outside edges. Beat with an electric mixer until crystals are evenly combined. Return to freezer for about 3 hrs, until firm. Remove from freezer 10 mins before serving; let stand at room temperature.
- For the kabobs, thread the fruit onto wooden skewers. Place on a baking pan. Brush with a little honey. Broil for 10 mins, turning occasionally and brushing with additional honey, until the fruit starts to char. Transfer to serving plates; drizzle with any juice from the pan.
- Mash the granita with a fork until crumbly. Spoon into serving bowls. Serve with kabobs.
