Ingredients

  • 1 medium head cabbage
  • 1 small onion, chopped
  • 1 tsp. mustard seed
  • 1 c. vinegar
  • 1 1/2 to 2 c. sugar
  • 1 tsp. salt
  • 1 carrot, grated
  • 1 sweet pepper, chopped
  • 1 tsp. celery seed
  • 1/4 c. water

Method

  • Grate cabbage.
  • Add salt and let stand for 1 hour.
  • Squeeze juice out.
  • Add carrot, pepper and onion.
  • Make a syrup of vinegar, water and sugar.
  • Add mustard and celery seed.
  • Boil 1 minute. Pour over cabbage and mix well.
  • Put in containers and freeze.
  • This slaw can be refrozen several times.
  • Do not use blender.
