Ingredients

  • 1 head cauliflower
  • 1/3 c. grated Parmesan cheese
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. dry mustard
  • 1 Tbsp. fresh parsley
  • 2 egg whites
  • salt to taste

Method

  • Steam cauliflower for about 20 minutes or until it is tender but crisp.
  • Blend mayonnaise, Parmesan cheese, lemon juice, salt, mustard and parsley.
  • Beat egg whites until stiff and fold in mayonnaise mixture.
  • Cover cauliflower with sauce and bake about 15 minutes in 350° oven or until frosting begins to brown.
  • Can be prepared early in the day except for final baking.
  • Serves six.
