Ingredients
- 1 head cauliflower
- 1/3 c. grated Parmesan cheese
- 1/2 c. mayonnaise
- 1 Tbsp. lemon juice
- 1/4 tsp. dry mustard
- 1 Tbsp. fresh parsley
- 2 egg whites
- salt to taste
Method
- Steam cauliflower for about 20 minutes or until it is tender but crisp.
- Blend mayonnaise, Parmesan cheese, lemon juice, salt, mustard and parsley.
- Beat egg whites until stiff and fold in mayonnaise mixture.
- Cover cauliflower with sauce and bake about 15 minutes in 350° oven or until frosting begins to brown.
- Can be prepared early in the day except for final baking.
- Serves six.
